“It’s party time Woody!” My kiddo’s 4th birthday party was this past weekend and I am exhausted. It feels like yesterday I pushed him out.
Every year, I swear I’m going to bake my butt off and have homemade baked goods for my kiddo. Nothing but the best for my guy, you know.
I fail every year. I’m always overwhelmed with the therapies and running around that is involved with having an autistic child. Not to mention the party planning. I never want to have a party at home or a relative’s house again.
This year, I planned on making macarons and an Oreo cake. I bought boxed cake mix instead. There is nothing wrong with boxed cake as it is delicious. I just like to make things from scratch but I’m learning to let that go as the kiddo gets older and life gets more demanding. (Not to mention there are some bakers y’all buy from who use boxed cake mix.)
Once I realized I couldn’t do the most this year, ( my boo even said I was trying to do too much, which he rarely tells me.) I settled on doing one thing from scratch, Pecan Praline Bites. (Yeah, that didn’t happen either. Ya girl was in the weeds!)
I learned the recipe almost 10 years ago from my first sales job at an interactive dining restaurant. They are quick and easy to make-you only need one bowl!
I tested a variation of the recipe with sweet potatoes because Fall and it’s my fav. I want to share it with y’all. These will make a great quick treat if you have to make something for a kiddo’s class or you want a small dessert.
Sweet Potato Cake Bites- 25 total bites
Non-stick Spray
1 egg, beaten
1 cup dark brown sugar, packed
¾ cup butter, unsalted-melted
1 sweet potato, small-mashed
½ cup flour, all purpose
Optional- pecan chips
Spray a small muffin tin with cooking spray. Set aside. Preheat oven to 350°
In a large bowl, mix together egg, dark brown sugar, and butter until incorporated. (Note: you may not need all of the butter. Your batter will be wet. You can add more butter after you add the flour if your batter looks dry.) Add sweet potato and flour. Mix until incorporated. (Note: Taste to see if it is sweet enough. You can add in some cinnamon sugar and spices if you want. Make it yours! You can even use the leftover butter and make a glaze.)
Fill ¾ . Bake for 15-20 minutes. Remove from the oven and pour out onto parchment paper to allow to cool completely.
This recipe is a great base for you to make it your own. As I say often, recipes are guidelines.
