Cake is my jam. I love to bake and eat it but I’m not a fan of how long it can take to make. There are days where I just want something quick and easy that can be mixed in one bowl. This cake is that cake. It is based off the Depression cake or Wartime Cake. During the Depression and WWII, there was a limit on dairy products available so to make due, this cake recipe was born using vinegar and vegetable oil. I’ve made a few updates to make it more me and give it an extra boost.
I enjoy eating this cake with or without icing. You can also add in some spices, nuts, whatever you think would work best. In regards to the sugar, the amount might be too much so feel free to cut it in half. I keep the cake on the counter covered with foil for 3-5 days but you an also keep it in the fridge. To be honest, it doesn’t usually last that long.
