It’s been hard to focus on cooking and testing recipes lately. I suppose it has to do with many a thing but I know I always think that I have to have a recipe; and If I don’t have one, then it’s not worth my time. I wasn’t always like this. Recently, the thought of quick and easy but Jazz it up a little, has been on my mind. That’s when I’m thankful we have a box of Shake and Bake in the pantry.
I remember what it’s like to just have homey food; nothing “fancy” or hard. Mom always seemed to throw stuff together and it came out good. She made food from taste and smell; never measurements. It was always a feeling.
Looking at most Alabama or Southern for that matter, recipes, they are looking for the fastest way to get done. Now, we know that baking from scratch is the thing and there is a time and place for that but it doesn’t have to be every time and every place. Somedays, I think I’m Superwoman but some days, I remember that a little hot sauce, Shake and Bake, and boneless pork chops are enough.
I hope cooking reminds you that it doesn’t always have to be hard, it just has to be enough.
