When I decided I would make Island Banana Bread from Jubilee by Toni Tipton Martin, it was a spur of the moment thing. I looked over the list of ingredients and knew I had all the items. I was wrong. I ended up (didn’t have a few key ingredients) not having cinnamon (though I had cinnamon sugar so I used it) nor molasses (I was sure I had some molasses but it was corn syrup so I used Steen’s Cane Syrup.) I had never made the above recipe so I was kind of bummed about not having all the ingredients but I had committed to making it because the butter was already at room temperature and my bananas were at peak ripeness.
The final product was moist and delicious so I guess not having all the ingredients worked out in my favor. To make it more kid-friendly, I removed the dates and pecans (I didn’t have them anyway).
As always, think of recipes as guidelines, not hard and fast rules. Cooking and baking should be fun. If you mess up, learn from it and try again. I’m sure some animal will enjoy the disastrous product. :)
